Kid Approved Meatloaf Muffins

Whenever I get a recipe that my kiddos fall in love with, I HAVE to share it up onto my blog here as soon as possible! This is one of the most common questions I get from my fellow mamas out there, "How do you feed your kids healthy recipes along with you?"

It's a struggle and an experiment, but I guarantee you will find some happy mediums. Do my kids partake in the veggies I put out? Sometimes! I try not to force anything on them, except the main dish. haaaha. If they really really don't like it, I tell them they need to figure out a different dinner for themselves because Mom already cooked. I actually think it has helped quite a bit with their mindset.

So, without further ado... here's a winner you can try with your kids!

  • 1 teaspoon olive oil

  • 1 cup finely chopped onion

  • 1/2 cup finely chopped red pepper

  • 1 teaspoon dried oregano

  • 2 garlic cloves, minced

  • 1 cup ketchup, divided

  • 1 1/2 pounds ground beef, extra lean (raw)

  • 1 cup finely pieced whole wheat bread

  • 2 tablespoons prepared mustard

  • 1 teaspoon Worcestershire sauce

  • 1/4 teaspoon freshly ground black pepper

  • 2 large eggs

  • Cooking spray

How to Make It

  • Preheat oven to 350°.

  • Heat the olive oil in a large nonstick skillet over medium-high heat. Add chopped onion, chopped red pepper, dried oregano, and minced garlic; sauté 2 minutes. Cool.

  • Combine onion mixture, 1/2 cup ketchup, and the remaining ingredients except cooking spray in a large bowl.

  • Spoon the meat mixture into 12 muffin cups coated with cooking spray. Top each with 2 teaspoons ketchup. Bake at 350° for 25 minutes or until a thermometer registers 160°. Let stand for 5 minutes.

You will have to message me if you try this recipe with your family! I would love to hear if your kiddos give it a thumbs up or thumbs down! Shoot me an email
